The best Pasta is made with quality material. De Cecco start with the best quality Durum Wheat. The Wheat is then milled to a point where only 60% of the semolina flower can be obtained, meaning an inferior quantity but superior quality. The flower is then kneaded with De Ceccos very own spring water , before being drawn through bronze which creates the shape and porosity that allows the sauce to stick to the Pasta. The final step is De Ceccos very own slow drying process, developed to preserve the pale colour of the Wheat, the fragrance, the taste and the firmness.

These steps lead to a superior quality Pasta which is why Pasta Masta uses it.
